WHAT I EAT IN A DAY #2 | HEALTHY, VEGAN & GLUTEN FREE

 

Hi there! Today I’m sharing another what I eat in a day with you. I hope these posts can inspire you to eat more wholefoods and prepare colorful, nourishing meals throughout the day.

 

Breakfast:

  • chia pudding with homemade almond milk
  • 1 kiwi
  • 1 nectarine
  • red currants
  • blueberries
  • 1 tbsp chopped almonds
  • ½ tbsp pumpkin seeds
  • 1 tsp ground flax seed

 

Lunch:

  • tofu scramble (recipe coming up)
  • cooked black rice
  • steamed beans
  • steamed mushrooms
  • cherry tomatoes
  • homegrown arugula
  • homemade tahini dressing

 

Dinner:

  • oven baked potato fries
  • red leaf lettuce
  • carrot
  • cucumber
  • radishes
  • cherries
  • ½ avocado
  • fresh parsley
  • ½ lime

 

+ fresh ginger tea
